I know there was a thread for this somewhere but I cannot find it. Oh well, Here is a really yummy receipe for Moroccan Spiced muffins. ;) These are savory and low cal for the most part. 8-)
Moroccan Spiced Muffins 1/2 cup flour 2 tsp. baking powder 1/2 tsp. Baking soda 1/2 tsp ground Corriander 1/2 tsp. ground Cumin 1/2 tsp ground Ginger 1/2 tsp salt 1/4 tsp. chile powder 1/2 cup couscous grains 1/2 cup hot water I beaten egg 2/3 cup milk 1/4 cup olive oil 2 Tsp lemon juice 1/2 cup sliced spring onions Preheat oven to 350 Mix the couscous and water and let sand 5 mins. In another bowl mix first 8 items and make a well in the middle. Add the finished couscous into the well and mix then add the rest of the items and mix well. Pour into greased muffin pan and cook for 18 mins or until toothpick intered into middle comes out clean. Enjoy! |

Speaking of great recipes to try......I made vegan popcorn balls tonight! I never made them before and they turned out pretty good! Here's the recipe if anyone wants to try it.
1/2 tsp. salt 1/4 cup Earth Balance Spread (or any vegan type butter) 1 tsp. vanilla extract 2 qts. popped popcorn 1/3 cup light corn syrup(I used the one with added vanilla in it) 1 cup granulated sugar 1/3 cup water STEP 1 Pop 2 qts. popcorn-air popped is best and put in a large pan. Keep popcorn warm by placing it in a warm (about 200 degrees F) oven. STEP 2 Put sugar,corn syrup,vegan spread,1/3 water and salt in a medium saucepan. Step 3 Place pan over medium heat and stir constantly until mixture comes to a boil. Step 4 Stop stirring and let syrup cook until it reaches 270 degrees F on a candy thermometer. Step 5 Remove pan from heat and stir in vanilla. Step 6 Take popcorn out of ven and pour hot syrup over popcorn a little at a time,stirring constantly until all popcorn is coated. Step 7 Let popcorn cool slightly,until you can handle it easily. Step 8 Grease your hands with vegan spread and form popcorn balls. Final and most important step....... ENJOY!!!!!!!!!!! |
