Flax Seed "oatmeal"
Feb 16th, 2007 at 11:33am

I want to share this great recipe with y'all.  Please note, this is NOT my recipe.  Dinah, a lady at StellaStyle.com, a low carb forum, came up with this dish and I think it's simply wonderful.  It's called "flaxmeal", because it's made from flax seed and takes the place of oatmeal.  You combine 1/2 cup of flax seed meal and 1/2 cup of heavy cream in a bowl; nuke in the microwave for 1 1/2 minutes.  Add your favourite flavourings and viola'!
I think the recipe also works with soy milk, etc., so vegetarians could also use the recipe.  For my dish I use a 1/2 C of flax with 2/3 C of heavy cream--I like my mix a little looser (not so thick).  Then I add 2 TBS of Splenda and a generous sprinkling of cinnamon.  I have eaten this dish three times this week and find that I don't need a mid morning snack on those days.
Flax is one of those simple yet fantastic foods that is SO healthy for us.  It's chock full of fiber and Omega-3 oils.  Give it a try--you may like it!   Smiley

I'm adding an important PS--you MUST drink plenty of water throughout the day when you eat flax.  If you don't, expect constipation.   Huh
