Shrimp Creole Recipe

I'm not fond of cooking AT ALL, so basically thats my husbands daily task.  Anyway, one thing that I will cook every once in awhile is Shrimp Creole. My mom used to make this for my sister and I when we were kids.  It's a very quick and easy microwave recipe that I thought I'd share.  I just had this for dinner today, it's so yummy! Cheesy

Ingredients: 2 tbsp of butter or margarine, 1 clove of minced garlic, 1 can (6oz) of tomato paste, 1 can (16oz) of crushed tomatoes,  1tsp of salt, 2 tsps of dried parsley flakes, 1/4 tsp of cayenne pepper (although, I only add a few dashes of this, it's so spicy), and 1 package (10 oz) of thawed frozen cooked shrimp.

Now, you can also add 4 thinly sliced green onions, 1/4 cup of chopped celery and 1/2 cup of chopped green peppers OR you can do what I do, and buy the can of tomatoes with those ingredients already in it.

Cooking Instructions: In a 2qt microwave proof dish, combine green onions, celery, green pepper, butter and garlic.  (If you buy the all inclusive tomatoes, just add the butter and garlic)

Cook covered for 3 minutes or until the green onions are transparent (or just until the butter is melted if doing it the other way)

Stir in remaining ingredients.  Cook covered for 5 minutes.  Stir, then re cover and put back in the microwave for 6 more minutes.  Let stand covered for 5 minutes before serving over cooked rice.    

*I know that microwaves vary, but I've cooked this in many microwaves over the years and the results are always the same. Wink
